An awesome and healthy pork adobo recipe for your Instant Pot.
Press the 'saute' button on your Instant Pot.
Add the coconut oil then the pork and saute for 5 minutes, making sure to stir frequently.
Add the salt, pepper, ground ginger, garlic, coconut aminos, beef stock, and bay leaf. Stir.
Close lid, switch to pressure cooker mode and cook for 22 minutes.
Remove the pork, leaving the juices in the Instant Pot.
Switch back to saute mode and add the almond flour into the juices while stirring and cook for 10-15 minutes until it is thickened.
Serve the chicken over cauliflower rice (for maximum health benefits). Pour the gravy over and garnish with chopped green onions.
