They say you can judge the character a steak aficionado by how they prepare a strip steak.
Generously salt and pepper both sides of the steaks.
Heat a skillet on high heat. Add olive oil.
Cook the steaks for 3 minutes on each side then lower heat to medium-low heat.
Add the butter, garlic and thyme. Cook for 1 1/2 minutes, basting with the butter constantly.
Turn off heat and let stand for 10 minutes.
Cut into strips across the grain. Serve and enjoy.
