Wrap that chicken in some crunchy cabbage!
Heat canola oil in frying pan over medium-high heat and add chicken breasts. Salt and cook through.
In a mixing bowl, combine the peanut sauce, rice vinegar, and lime zest and mix well. Add to the chicken and mix well. Take off heat.
Spoon a generous amount of the chicken onto Napa cabbage leaves, top with the julienned vegetables and cilantro and serve.
