You can still enjoy the fancy taste of French Onion even if you're not a soup fan.
In a mixing bowl, combine chicken, salt, pepper, garlic, parsley, and olive oil. Mix well making sure the chicken is coated well.
Cook the chicken on medium high heat until it is cooked through and both sides are browned well. Remove chicken from pan and melt 1 tbsp butter.
Add the onions, salt and pepper to taste. Cook until the onions are deeply caramelized.
Add the thyme and beef broth, heat through and mix well.
Add the chicken back to the top of the onions, top evenly with the gruyere cheese and broil for 5 minutes.
