What goes better together than broccoli and cheese?
Melt the butter in a sauce pan or pot on medium-high heat.
Add the onion and cook until tender.
Add the flour and stir to create a rue. Then add the half & half and the vegetable stock and stir.
Add the carrots, salt, pepper, and nutmeg and stir. Bring to a simmer and cook for 15 minutes.
Add the cheddar. Stir and cook until melted.
