Melt the butter in a pan over medium-high heat.
Cook onion and garlic until onion becomes tender. Add in the rice and vegetable stock and bring to a simmer.
Add in the frozen peas and juice of 1 lemon. Continue cooking and stirring until the rice is tender. Serve garnished with grated parmesan and chopped parsley.
