Get a little eastern spice in your quesadilla.
Heat butter in a skillet on medium high heat. Add the kimchi once the butter is melted and sautee until the edges are browned. Set aside to cool.
Place about a 1/2 cup of the kimchi on one half of a tortilla. Top with the cheese blend, about 1/2 a tbsp of sesame seeds and fold the other half over.
Add cooking oil to a skillet and cook the quesadilla over medium-high heat until both sides are golden brown. Garnish with green onions and more sesame seeds.
