Slice the hard boiled eggs in half length-wise. Separate the yolks and whites, placing the yolks in a separate bowl.
Coat the cooked egg whites with the flour, then drench in the egg wash and coat with bread crumbs.
Deep fry the breaded egg whites at 350 degrees Fahrenheit or medium-high heat until golden brown.
With a fork, combine the cooked egg yolks with the mayo, relish, mustard, hot sauce, and salt & pepper to taste until a mash potato like consistency.
Scoop the egg yolk mixture into a piping bag with your preferred tip and squeeze into the yolk cups of the fried egg whites.
