Sausages and vegetables over steaming rice. Sounds like the perfect meal.
Combine all the vegetables and mix well. Lay out evenly on a baking sheet.
Layer the sliced sausage on top of the vegetables.
Sprinkle with the olive oil and sprinkle with the chopped garlic.
Top with the diced tomatoes and salt & pepper to taste. Bake for 1 hour at 375 degrees Fahrenheit.
Serve with rice.
