A childhood favorite ice cream sandwich, now livin' large.
In a large mixing bowl, combine and whisk together the brown sugar, white sugar, and the melted butter.
Mix in the eggs and vanilla.
Mix in the flour, baking powder, and salt.
Fold in the chocolate chips.
Pack the cookie dough lightly into two round cake pans and bake for 35 minutes at 375 degrees Fahrenheit.
Pack another cake pan of the same size with softened vanilla ice cream and freeze.
Sandwich the ice cream between the two large chocolate chip cookies. Add more chocolate chips on the side if desired.
