Three Bean Salad

Ingredients

  • 1/2 red onion chopped into bite-size pieces
  • 3/4 cucumber seeded and chopped into bite-size pieces
  • 1/2 cup parsley chopped with stems removed
  • 15 oz can of chickpeas
  • 15 oz can of kidney beans
  • 15 oz can of cannellini beans
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tspn dried oregano
  • 1/2 tspn salt
  • 1/4 tspn pepper

Instructions

  1. In a large salad bowl, combine the onion, cucumber, parsley, chickpeas, kidney beans, and canniellini beans.

  2. In a sauce cup, combine the olive oil, red wine vinegar, oregano, salt, and pepper and mix well.

  3. Pour the salad dressing over the bean salad and mix well.
