Three Bean Salad
A delicious and nutrient packed super salad

Ingredients
- 1/2 red onion chopped into bite-size pieces
- 3/4 cucumber seeded and chopped into bite-size pieces
- 1/2 cup parsley chopped with stems removed
- 15 oz can of chickpeas
- 15 oz can of kidney beans
- 15 oz can of cannellini beans
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 tspn dried oregano
- 1/2 tspn salt
- 1/4 tspn pepper
Instructions

In a large salad bowl, combine the onion, cucumber, parsley, chickpeas, kidney beans, and canniellini beans.

In a sauce cup, combine the olive oil, red wine vinegar, oregano, salt, and pepper and mix well.

Pour the salad dressing over the bean salad and mix well.
