Quick and easy lasagna to make your Monday a little more bearable.
Place a layer of the marinara at the bottom of the slow cooker. Next place a layer of the lasagna noodles to cover the bottom. Break it apart if you have to in order to make it fit.
Add a layer of ricotta cheese and then a layer of the mozzarella. Cover the cheeses with a layer of the spinach, then the bell pepper and onion.
Repeat the first and second steps.
Pour a thin layer of the marinara on top of the second topping of the bell pepper and onion and cover with another layer of the lasagna noodles. Pour a generous amount of the marinara and then follow it with a generous layer of mozzarella topped with the grated Parmesan and basil.
Cook on high for 2 hours.
