A mild-yet-delicious pesto pasta recipe for the entire family and/or guests.
Blend together the spinach, walnuts, garlic, Parmesan, salt, pepper, lemon juice, and 1/2 cup olive oil until creamy.
Heat about a tbsp of olive oil in a skillet on medium high heat and cook the chicken breast. Season with salt and pepper. When one side has turned nicely golden and crusty, turn over. Remove from heat when cooked through and slice into strips.
Combine the chicken with the cooked pasta and add the pesto. Mix well before serving.
