A hot and healthy bowl of soup filled with vegetables and pasta.
In a large pot, heat oil over medium-high heat then add the carrots, celery, and onion. Salt and pepper to taste and stir-fry until the onions are soft.
Add the potato and continue stir-frying for 1-2 minutes.
Add the garlic, tomatoes, vegetable stock and zucchinis. Stir and simmer for 45 minutes.
Add in the beans, spinach, and pasta. Stir and simmer for another 10 minutes.
