Healthy Vegetable Minestrone Soup

Ingredients

  • 1 tbsp oil
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 onion chopped
  • 1 potato cubed
  • 3 cloves garlic minced
  • 28 oz diced tomatoes
  • 6 cups vegetable stock
  • 2 zucchinis chopped
  • 15 oz cannellini beans
  • 3 cups spinach
  • 2 cups pasta

Instructions

  1. In a large pot, heat oil over medium-high heat then add the carrots, celery, and onion. Salt and pepper to taste and stir-fry until the onions are soft.

  2. Add the potato and continue stir-frying for 1-2 minutes.

  3. Add the garlic, tomatoes, vegetable stock and zucchinis. Stir and simmer for 45 minutes.

  4. Add in the beans, spinach, and pasta. Stir and simmer for another 10 minutes.
