Sweet and tangy honey BBQ chicken on mini tortillas.
Preheat your oven to 350°F.
Cut chicken breasts into small cubes and place in a medium bowl. Add salt, paprika, pepper, garlic powder, barbecue sauce, and honey. Mix to coat chicken well.
Heat oil in a large cast-iron skillet over high heat.
Add the marinated chicken and cook until golden and charred on the edges. Remove from the heat.
Place the tortillas side by side on a baking sheet with edges overlapping slightly.
Sprinkle shredded cheese, red onion, bacon, cooked chicken, and chopped parsley evenly over the tortillas.
Bake until the cheese is melted. Serve warm.
