Delicious, moist, and easy to make honey garlic chicken in an Instant Pot.
Season chicken well with salt and pepper on both sides.
Set Instant Pot to Sauté and add 2 tablespoons olive oil. Add the chicken, skin side down and sauté until golden. Flip and cook about 3 minutes more.
Whisk together remaining olive oil, soy sauce, honey, sesame oil, garlic, lime juice, green onions, and pinch of red pepper flakes in a bowl.
Place all chicken in the Instant Pot and pour the sauce over. Lock the lid and set to Pressure Cook on High for 10 minutes.
When done cooking, remove chicken from the Instant Pot and set on plate to keep warm.
Ladle about ¼ cup of sauce and whisk in cornstarch. Pour liquid back into Instant Pot and turn on sauté function. Let simmer until slightly thickened.
Pour sauce over chicken and garnish with the green onions and sesame seeds. Serve with rice.
