Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper if desired, and arrange the eight English muffin halves cut-side up. Gather your sauce, cheese, pepperoni, and any optional toppings so everything is ready to assemble.
-
For a crispier result, bake the plain muffin halves for about 3–5 minutes before adding the toppings. Remove them from the oven once their surfaces feel slightly dry and lightly toasted. Although this step is optional, it helps the muffins hold up better under the sauce and cheese.
-
Spread a thin, even layer of pizza sauce over each muffin half. Leave a small border around the edges to help keep the sauce from spilling over during baking. Avoid adding too much sauce, as excess moisture can make the muffins soft instead of crisp.
-
Divide the shredded mozzarella evenly among the eight muffin halves. Make sure the cheese covers most of the sauce so you get a delicious, gooey layer in every bite. If you're using additional vegetables or other toppings, add them now. For children who prefer simple flavors, plain cheese pizzas are just as delicious.
-
Place two pepperoni slices on each mini pizza. Feel free to replace the pepperoni with cooked chicken, vegetables, or another favorite topping. For a little extra flavor, sprinkle a pinch of dried oregano over the pizzas before baking.
-
Place the baking sheet in the preheated oven and bake for approximately 8–10 minutes, or until the mozzarella has melted and the edges are golden. If you prefer a more browned cheese topping, switch to the broiler for the final minute or two, watching closely to prevent burning.
-
Let the pizzas cool for a couple of minutes before serving, especially if children will be eating them. The cheese and toppings can be very hot straight from the oven.
