General Tso's Chicken

Ingredients

For the Chicken:

  • 500 g boneless chicken thighs or breasts cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 egg white
  • ½ cup cornstarch
  • Oil for frying

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • ½ cup chicken broth
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • ½ teaspoon chili flakes optional for heat

For Garnish:

  • Sesame seeds
  • Chopped spring onions

Instructions

Marinate the chicken

  1. In a bowl, mix soy sauce, rice vinegar, and egg white. Add the chicken and let it sit for 10 minutes. Coat each piece lightly in cornstarch.

Fry until golden

  1. Heat oil in a pan over medium-high heat. Fry the chicken in batches for about 3–4 minutes until golden and crisp. Remove and set aside.

Make the sauce

  1. In another pan, heat a small drizzle of oil. Add garlic, ginger, and chili flakes. Cook for 30 seconds until fragrant, then pour in soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, and chicken broth. Stir well and simmer for 2 minutes.

Thicken and combine

  1. Add the cornstarch-water mixture and stir until the sauce thickens slightly. Return the fried chicken to the pan, tossing to coat each piece evenly.

Serve

  1. Sprinkle with sesame seeds and spring onions. Serve immediately over steamed rice or noodles.
