How to Thicken Soups and Sauces

Ingredients

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • or 1 tablespoon all-purpose flour
  • 1 tablespoon butter
  • or 2–3 tablespoons cream
  • or 1/2 cup mashed potatoes / blended vegetables

Instructions

  1. For a quick thickener, mix cornstarch with cold water in a small bowl until smooth.
  2. Stir this slurry slowly into the hot soup or sauce while stirring continuously.
  3. Let it simmer for 2–3 minutes until it thickens.
  4. For a richer option, melt butter in a small pan and stir in flour to make a smooth paste.
  5. Cook for 1–2 minutes, then whisk it into the soup or sauce.
  6. Simmer for a few minutes until it reaches the desired consistency.
  7. For creamy soups, blend a portion of the soup itself and stir it back into the pot.
  8. Mashed potatoes or pureed vegetables also work well for a naturally thick texture.
  9. For sauces, adding a little cream or cheese can help make them thicker and smoother.
