Jalapeño-Pineapple Cocktail

Ingredients

  • 2 ounces tequila blanco
  • 2 ounces pineapple juice
  • ¾ ounce fresh lime juice
  • ½ ounce agave syrup or simple syrup
  • 2 –3 thin jalapeño slices plus more for garnish
  • Ice
  • Pineapple wedge or lime wheel for garnish
  • Optional: chili-lime seasoning and lime juice for the rim

Instructions

  1. If you want a spicy-salty rim, rub a lime wedge around the edge of your glass. Dip the rim into chili-lime seasoning and set the glass aside.
  2. Add the jalapeño slices and agave syrup to a cocktail shaker. Gently muddle them for a few seconds. You don't need to completely crush the pepper; just press enough to release some of its flavor.
  3. Pour in the tequila, pineapple juice, and fresh lime juice. Add a generous handful of ice.
  4. Close the shaker and shake vigorously for about 15–20 seconds. This chills the drink while helping the flavors come together.
  5. Fill your prepared glass with fresh ice and strain the cocktail over it. Garnish with a pineapple wedge, lime wheel, or a fresh jalapeño slice. Then comes the best part: take a sip and enjoy the sweet pineapple followed by a gentle spicy finish.
