Mango Kiwi Coolers

Ingredients

For the Mango Layer

  • cups frozen diced mango
  • ½ cup plain yogurt
  • ¼ cup honey adjust to taste
  • Zest of 1 lime
  • ½ to 1 cup ice cubes
  • 2 –4 tablespoons cold water if needed

For the Kiwi Layer

  • 3 ripe kiwis peeled
  • ½ cup plain yogurt
  • 2 tablespoons honey
  • ½ cup fresh spinach
  • ½ cup ice cubes

For Garnish

  • Fresh kiwi slices
  • Fresh mint or basil leaves optional
  • Extra lime zest optional

Instructions

  1. Add the frozen mango, yogurt, honey, lime zest, ice, and a splash of cold water to a blender. Blend until the mixture becomes thick, smooth, and creamy. If needed, add a little more water to help everything blend while keeping the smoothie rich and frosty.
  2. Pour the mango mixture evenly into serving glasses, filling each glass about halfway. Lightly tap each glass on the counter to level the surface, creating a clean base for the next layer.
  3. Rinse the blender, then add the peeled kiwis, yogurt, honey, spinach, and ice. Blend until silky smooth. The spinach blends right in, adding extra nutrition without overpowering the fresh kiwi flavor.
  4. Slowly pour the kiwi smoothie over the mango layer to create a beautiful two-tone effect.
  5. Top each cooler with fresh kiwi slices. For even more summer flavor, garnish with a few mint or basil leaves and a sprinkle of lime zest.
  6. Serve immediately with a straw or long spoon and enjoy while perfectly chilled.
