-
Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, allowing a little overhang for easy removal after baking.
-
In a large mixing bowl, beat together the brown sugar, creamy peanut butter, and softened butter until smooth and creamy. Add the egg and vanilla extract, then mix until everything is fully incorporated.
-
In a separate bowl, combine the rolled oats, oat flour, baking powder, and salt. Gradually add the dry ingredients to the peanut butter mixture, stirring just until a soft dough forms.
-
Press about two-thirds of the dough evenly into the prepared baking pan to create the crust. Spoon the strawberry jelly over the surface and gently spread it into an even layer. Sprinkle the peanut butter chips across the jelly, then crumble the remaining dough over the top in small pieces.
-
Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the crumble topping is lightly golden and the edges are set.
-
Allow the bars to cool completely in the pan on a wire rack for at least 1 hour. Once cooled, lift them out using the parchment paper and slice into squares or rectangles.
