Carrot Dogs and Slaw

Ingredients

Carrot Dogs:

  • 8 medium carrots peeled, trimmed
  • 2 tablespoons pure maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon adobo sauce from can of chipotle chiles in adobo
  • 1/2 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Slaw:

  • 3/4 cup mayonnaise divided
  • 1/4 cup fresh lime juice divided
  • 1/2 small red onion finely sliced
  • 1/2 small head of savoy cabbage thinly sliced
  • 1 can white beans drained
  • 1/3 cup coarsely chopped cilantro plus 3 tablespoons whole leaves
  • Vegetable oil for grill
  • 4 hot dog buns
  • 2 tablespoons Corn Nuts

Instructions

  1. In a saucepan, heat maple syrup, soy sauce, adobo, carrots, and water over medium heat. Bring to a boil and cook for 10 minutes.
  2. Uncover, reduce to simmer, and cook for 3 minutes.
  3. Whisk mayo, honey, lime, salt, and pepper in a bowl. Add onions, cabbage, beans, and cilantro and toss to coat.
  4. Heat the grill pan over medium heat and brush with oil. Place carrots in the pan and cook for 3 minutes per side.
  5. Butter and toast your buns.
  6. Now, it's time to eat! Plate up your dogs and slaw.
  7. Serve and enjoy! :D
