Fried Chicken Sandwich

boneless chicken thighs

cup
mayonnaise

cup
cornstarch

seasoned rice vinegar
divided

soy sauce
divided

Sriracha

soft seeded hamburger buns

small head green cabbage

scallions

Neutral oil
such as vegetable or peanut, 4–6 cups

Kosher salt

Freshly ground black pepper

Whisk soy sauce, rice vinegar, salt, and pepper together. Pour over chicken thighs and let marinate in a zip top bag.

Meanwhile, heat your oil in a large heavy-bottomed pot on medium high heat.

Mix the mayo and sriracha together until smooth.

Preheat the broiler. Broil 4 buns for 1 minute until lightly golden brown. Remove and set aside.

Thinly slice the scallions and set aside. Slice the cabbage and place in a small bowl.

Toss the cabbage with soy sauce and rice vinegar.

Remove the chicken from the bag and coat evenly with cornstarch.

Place chicken in the oil and cook for about 5-7 minutes or until dark brown and cooked through.

Spoon sriracha mayo on one side of the buns. Place chicken on top and next add the cabbage slaw. Top with the other bun.
