In a mixing bowl, whisk together the red curry paste, ginger paste, lemon grass paste, coconut milk, and white wine.
On a large baking tray, spread the black mussels out evenly and pour the red curry mix over the mussels. Bake at 400 degrees Fahrenheit for 10 minutes.
Place the mussels inside a serving bowl and garnish with cilantro, sliced red peppers and lime wedges and pour the red curry over the mussels. Serve with toasted baguette.
