Packed with nutrients, great for either a cold or a cold day.
In a skillet, heat olive oil on medium-high heat and add the onion, carrots, celery, salt, and pepper and cook for 15 minutes. Add the garlic and cook another minute.
Pour in the chicken broth and bring to a boil.
Add the egg noodles and cook for 6 minutes.
Add the cooked chicken and cook 2 minutes. Salt and pepper to taste.
Add the parsley, mix well and serve hot.
