Baked-Potato Eggs

  • 2 baking potatoes
  • 2 tbsp butter
  • 1/4 cup grated Parmesan
  • 2 precooked turkey sausages diced
  • 4 large eggs


  1. Crank the oven to 400° F. Scrub the potatoes and poke each with a fork. Bake 'em until they're fork-tender, about 45 minutes. 

  2. Carefully cut each potato in half. Scoop out their insides and stir in the cheese and butter, then fold in the sausages. Spoon the mixture back into the potato halves, and make a little hollow in the center of each. Break 1 egg into each hollow. 

  3. Arrange the potato halves on a baking sheet and cook them until they're set, about 10 to 15 minutes.
