Cookie Dough Cheesecake Bars Recipe

For Crust
- Cooking Spray (for pan)
- 1/2 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1 Egg (large)
- 1 tsp. Vanilla Extract
- 1 1/4 cup All-Purpose Flour
- 1/2 tsp. Salt
- 1 cup Semisweet Chocolate Chips
For The Cheesecake
- 2 (8-oz) blocks of cream cheese (softened)
- 1/4 cup Sour Cream
- 2/3 cup Granulated Sugar
- 3 Eggs (large)
- 1 tsp. Pure Vanilla Extract
- 1 tsp. Salt
For The Topping
- 1/2 cup Butter (1 stick- softened)
- 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 2 tbsp. Milk
- 2 tsp. Pure Vanilla Extract
- 1 1/2 cup Almond Flour
- 1/2 tsp. Salt
- 1 cup Chocolate Chips (mini)
- 1/2 cup Chocolate Chips (melted)
Instructions
- Preheat oven to 350 degrees and line 9 x 9 inch pan with parchment paper and cooking spray.
For crust
- In a large mixing bowl, beat sugars and butter until light and fluffy, then beat in egg and vanilla.
- Add flour and salt, stirring just until combined, then fold in chocolate chips.
- Once mixed, press dough evenly into pan and bake for 20 minutes, let cool.
- Reduce oven to 325 degrees.
For the filling
- In a large bowl, beat cream cheese, sour cream, and sugar until smooth.
- Then add eggs, vanilla, and salt - beat until combined.
- Pour over crust and bake until cheesecake only slightly jiggles in the center (40 minutes).
- Turn off heat and prop oven door open, letting cheesecake cool in oven for 1 hour.
- Once cooled, refrigerate cheesecake for at least 4 hours (overnight preferably).
For cookie dough
- In a large bowl, use a hand mixer to beat butter and sugars until light and fluffy.
- Then beat in milk and vanilla, once mixed add almond flour and salt then mix.
- Stir in chocolate chips then form into small balls for bar toppings.
- Cut into bars and add cookie dough to the top of the bars.
- Serve and enjoy!
