Burrito Cups
An easy recipe when you have to entertain more than just one mouth.

Ingredients
- 1 12 Muffin Pan
- 1 Onion Chopped
- 1/2 lb Chicken Meat Breast or thigh diced
- 2 Garlic Cloves Minced
- 1/2 cup Tomatoes Diced
- 1 package Store Bought Burrito Seasoning
- Tortillas Cut to fit in individual muffin cups
- Refried Beans Optional
- Cooked Rice Optional
- Shredded Cheese Optional
- Sour Cream Topping Optional
Instructions

On a non-stick skillet (or a greased pan) cook the onions on medium high heat until tender. Then add the chicken meat and garlic. Cook until the chicken is 3/4 fully cooked and remove to a mixing bowl.

Add the tomatoes and the burrito seasoning and mix well.

Layer two tortillas on the bottom of the muffin tray. Then place a spoonful of refried beans (optional) per muffin cup. Add in cooked rice (optional) then add a layer of the chicken and seasoning mix topped with your favorite cheese.

Bake in the oven at 350 degrees Fahrenheit for 15 to 20 minutes. Serve topped with sour cream.
