Summer Cocktail Party Treats
Refreshing cocktails and tasty veggie treats guarantee a Summer day worth remembering.
Ingredients
- 1 tbsp Butter
- 1/2 Onion Chopped
- 5 Button Mushrooms Chopped
- 2 Garlic Cloves Minced
- 1 tspn Salt
- 1 tspn Pepper
- 4 Celery Sticks Peeled and chopped
- 2 cups Mashed Potatoes
- 1/4 cup Coriander Chopped
- 1/4 cup Parsley Chopped
Breading Station Ingredients
- 1 cup Flour
- 1 cup Bread Crumbs
- Oil for Deep Frying
Cocktail
- 1 Celery Stick Chopped
- 3 Mint Leaves
- 25 mL Vodka
- 25 mL Simple Syrup
- Lime Juice
Instructions

In a skillet, melt butter on medium-high heat. Add the onion, mushrooms, garlic, salt and pepper. Cook until onions are tender. Add the celery and cook for 5 more minutes and add to mash potatoes in a separate mixing bowl.

Add the coriander and parsley and mix well. Roll in cylinders that fit in your palm and use a breading station to bread them to deep fry. Dip in egg wash and bread crumbs twice for double coating.

Deep fry on medium-high or 350 degrees Fahrenheit until golden brown. Place on paper towels to soak up excess oil.
Cocktail

Use a mortar and pestle to crush and mix the celery and mint leaves. Pour vodka and simple syrup on ice. Use a strainer to juice the celery and mint mix into the vodka. Add lime juice to taste. Top off with 5 ounces of club soda. Garnish with mint leaves and a lime wedge.
