Curry is a dish best known in its Indian variety, with all of the spices such as turmeric and curry powder, garam masala, and cumin. A slightly lesser known variant is its Thai cousin, which uses much of the same spices but with coconut milk used in its broth.
This gives it a velvety texture and richness not found in Indian curry. This is the perfect dish for when you need something warm to sit in your stomach and fill you up, whether it’s in an air-conditioned office or a chilly evening.
To make green curry, you’ll need ginger, scallions, and limes- ingredients primarily found in Thai curries. Add some jalapenos for the traditional spice level, but don’t hesitate to add more or less to your own tastes! If you’re in a rush, use the curry paste as shown in the video, but otherwise try playing around with proportions of spices instead for a better flavor and increased health benefits.
Fish sauce is also a good idea, as it adds not only salt to your dish but also a level of savory thickness that you would normally not find in this recipe. The video calls for rice noodles, but if those are unavailable feel free to substitute with rice!
