
One Pot Bacon Mushroom Risotto
A balanced helping of meat, grain, and veggies.

Ingredients
- 2 tbsp olive oil
- 1 onion sliced
- 4 slices of bacon chopped
- 1 cup mushrooms
- 1 1/2 cups arborio rice
- 1/2 cup white wine
- 5 cups chicken stock
- 1/2 cup parmesan cheese
Instructions

Heat olive oil in a pot on medium-high heat and brown onion.

Add in bacon and cook until browned.

Add mushrooms and continue cooking until mushrooms are tender.

Add in the rice and stir to mix well. Then slowly pour in the white wine and bring to a boil. Add in the chicken stock and bring to a boil and lower the heat to a simmer until the rice has absorbed the liquid.

Add the parmesan cheese, stir. When the rice is cooked through, serve and enjoy.
