Baked Lemon Herb Salmon with Roasted Veggies

Ingredients

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 half teaspoon dried thyme
  • Salt and black pepper to taste

For the roasted vegetables

  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 bell pepper sliced
  • 1 tablespoon olive oil
  • 1 half teaspoon salt
  • 1 half teaspoon black pepper

Instructions

  1. Preheat the oven to 200°C and line a baking tray with parchment paper.
  2. Place the broccoli, carrots, and bell pepper on the tray. Drizzle with olive oil and season with salt and black pepper. Toss gently to coat.
  3. Place the salmon fillets on the same tray.
  4. In a small bowl, mix olive oil, garlic, lemon juice, oregano, thyme, salt, and black pepper.
  5. Brush the mixture evenly over the salmon fillets.
  6. Bake for 18 to 20 minutes until the salmon is cooked through and the vegetables are tender.
  7. Serve warm with extra lemon if desired.
