Buffalo Chicken Mini Sandwiches
Ingredients
- 2 cups cooked chicken shredded
- 1 third cup buffalo sauce
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 quarter teaspoon garlic powder
- 1 quarter teaspoon onion powder
- 1 quarter teaspoon salt
- 1 quarter teaspoon black pepper
- 8 slices soft sandwich bread
- 1 half cup shredded mozzarella or cheddar cheese
- 2 tablespoons mayonnaise
- 1 tablespoon plain yogurt

Heat the olive oil and butter in a pan over medium heat.

Add the shredded chicken, garlic powder, onion powder, salt, and pepper.

Stir in the buffalo sauce and cook for 4 to 5 minutes until the chicken is evenly coated and heated through.

Lower the heat and add the cheese, stirring gently until melted.

Mix the mayonnaise and yogurt in a small bowl until smooth.
