  • 1 pound ground beef or Italian sausage or a mix of both
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can 28 ounces crushed tomatoes
  • 1 can 14 ounces diced tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes optional, for a little kick
  • Salt and black pepper to taste

For the Pasta:

  • 8 lasagna noodles broken into bite-sized pieces (or any pasta you prefer)

For the Toppings:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Brown the Meat: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef or sausage and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat.
  2. Sauté Aromatics: Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes, until the onion becomes translucent and the garlic is fragrant.
  3. Build the Soup Base: Stir in the crushed tomatoes, diced tomatoes, chicken or vegetable broth, Italian seasoning, dried basil, and crushed red pepper flakes.   4. Cook the Pasta: Add the broken lasagna noodles directly into the soup. Cook until the pasta is tender, stirring occasionally to prevent sticking. This usually takes about 10-12 minutes.
