Caramelized Sweet Potatoes with Miso Tahini Dressing
Elevate your basic sweet potato side dish with a creamy miso-tahini dressing that will have your tastebuds dancing.
Ingredients
- 2 small sweet potatoes 10 oz.
- 2 tbsp neutral oil
- 2 tbsp miso paste
- 2 tbsp tahini
- 2 tsp white distilled vinegar
- 1 tsp raw sesame seeds
- 1 scallion
- 1/2 tsp kosher salt
Instructions

Preheat oven to 450 degrees.

Wash and scrub the skins of your sweet potatoes.

Cut the potatoes into quarters lengthwise and then cut in half crosswise.

Toss potatoes with oil and salt then place on a baking sheet. Cook, tossing every 5 minutes until tender enough for a fork to pierce through the inside.

Mix tahini, miso paste, water, and vinegar into a small bowl until smooth.

Trim and thinly slice one scallion.

Heat a small skillet over medium heat. Toast the sesame seeds, tossing constantly until they're golden brown.

Spoon tahini over the plate and top with the sweet potato wedges; sprinkle sesame seeds and scallions over the top.
