Don’t Take Crepe For Breakfast; Add A Fried Egg, Cheese, and Ham

Savory Breakfast Crepe Pockets

Savory breakfast goodness held together with a thin light crepe.

Ingredients

  • 1 cup flour
  • 3 eggs
  • 1 1/2 cups milk
  • salt
  • 1 tbsp butter
  • 1/2 onion sliced
  • 2 garlic cloves chopped
  • 1 cup spinach
  • cheese slices
  • ham slices
  • fried egg

Instructions

  1. Combine the flour, 3 eggs, milk and a pinch of salt. Whisk together until it becomes a runny pancake batter-like mix.

  2. Heat a skillet over medium-high heat and melt 1 tbsp of butter. Saute onions until caramelized.

  3. Add the garlic, spinach and salt to taste. Cook until spinach is tender. Remove from skillet.

  4. In the same skillet, lightly grease, or use a non-stick pan to pour a thin layer of the crepe batter over medium heat. Cook for 2-3 minutes and flip to cook the other side until both sides are lightly golden brown. Move to a baking sheet.

  5. Place a slice of cheese in the middle of the crepe. Then a slice of ham topped with the sauteed spinach and onion.

  6. Finally top it with a fried egg (your choice of style) and fold in the edges of the crepe to make a square showing only the yolk of the egg.

  7. Bake for 5 minutes at 350 degrees Fahrenheit.
