This cloud cake lives up to its name, it’s airy, soft, and deliciously simple to make. With just a few ingredients, you can create a dessert that feels like eating a sweet, delicate cloud.
Easy Cloud Cake
Ingredients
- 4 large eggs separated
- ½ cup granulated sugar
- ¼ cup all-purpose flour
- 2 tablespoons cornstarch
- ¼ teaspoon salt
- ½ teaspoon cream of tartar
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
Preheat and prepare

Heat your oven to 170°C (340°F). Line the bottom of an 8-inch round cake pan with parchment paper. Do not grease the sides, this helps the cake rise evenly.
Whip the egg whites

In a clean bowl, beat the egg whites with cream of tartar and a pinch of salt until foamy. Gradually add half the sugar while beating until stiff peaks form.
Make the base

In another bowl, whisk egg yolks, the remaining sugar, and vanilla until pale and creamy. Sift in the flour and cornstarch, then gently fold until smooth.
Combine gently

Fold one-third of the whipped egg whites into the yolk mixture to lighten it. Then gently fold in the rest, taking care not to deflate the batter.
Bake

Pour the batter into the prepared pan and bake for 30–35 minutes, or until lightly golden and springy to the touch.
Cool and serve

Invert the cake (still in the pan) onto a wire rack to cool. Once cooled, dust lightly with powdered sugar or top with whipped cream and fresh fruit.
