Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Whisk together the heavy cream, milk, sugar, cocoa powder, and salt in a medium saucepan. Place the saucepan over medium heat and cook, constantly whisking, until the mixture comes to a simmer.
  2. Reduce the heat to low and add the chocolate chips. Stir until the chocolate chips are melted, and the mixture is smooth.
  3. Remove the saucepan from the heat and stir in the vanilla extract.
  4. Let the mixture cool to room temperature, then cover and chill in the refrigerator for at least 2 hours or overnight.
  5. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until the ice cream is thick and creamy.
  6. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours or until firm.
  7. When ready to serve, let the ice cream sit at room temperature for a few minutes to soften before scooping and serving.
