Salmon with Chimichurri Sauce

A delicious, healthy, and easy salmon recipe drizzled with homemade chimichurri sauce.

Ingredients

Salmon

  • 1 1/2 lb fresh salmon fillet
  • kosher salt
  • ground black pepper

Chimichurri

  • 1 cup fresh cilantro tightly bunched
  • 1 cup fresh parsley tightly bunched
  • 2 green onions
  • 1 clove garlic
  • 1/2 cup extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1/2 tspn oregano
  • 1/4 tspn kosher salt
  • ground black pepper

Instructions

  1. Preheat your oven to 450F.

  2. Sprinkle fillet with kosher salt and black pepper. Place on parchment-lined baking sheet.

  3. Bake the fillet for about 10 minutes or until flaky.

  4. Chimichurri: Slice tops off of the green onions. Using a blender, blend all the chimichurri ingredients until smooth.

  5. Drizzle chimichurri sauce over the salmon and serve with potatoes.
