Taco Tuesday Casserole
A delicious taco-inspired casserole for Taco Tuesday.

Ingredients
- cooking spray
- 2 lbs ground beef
- 1/2 cup onion diced
- 1 1/2 cups water
- 9 tbsp taco seasoning mix
- 5 flour tortilla
- 8 corn tortilla chips or more to taste
- 1/4 cup tomatoes diced
- 2 tbsp olives chopped
Instructions

Preheat your oven to 350℉ and grease a 9x13 baking tray with the cooking spray.

Heat a skillet over medium-high heat. Cook the ground beef until almost browned, making sure to break up the big chunks.

Add the chopped onion and cook until beef is browned and onion softened.

Mix the water and the taco seasoning into the beef mixture and simmer until water evaporates.

Line the greased baking dish with the tortillas and top with 1/2 the ground beef mixture. Spoon 1/2 the corn over and top with 1/3 of the cheese. Crush the tortilla chips over the cheese layer. Repeat with remaining ingredients and end with the cheese, tomatoes, and olives.

Bake until heated through and cheese is melted.
