Ingredients

  • 1 pound lasagna noodles
  • 1 container ricotta
  • 2 cups shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1 tablespoon Italian seasoning
  • 2 large eggs
  • 1 package frozen chopped spinach thawed and excess water squeezed out
  • 2 jars marinara sauce divided

Instructions

  1. Bring a large pot of salted water to boil. Add lasagna noodles and cook until nearly cooked.
  2. In a bowl, mix ricotta, Parmesan, Italian seasoning, mozzarella, and eggs until smooth. Add the spinach and stir again.
  3. Pour 1/2 jar marinara in the crockpot base. Cut the noodles in half crosswise. Spread the ricotta on the noodle and roll it up. Place in the crockpot with the end facing downwards. Continue to roll the lasagna pieces.
  4. Top with 1 jar of marinara and cook for 3 hours on high.
  5. Pour the remaining 1/2 jar on top and allow to heat up before you eat.
  6. Serve and enjoy! 😀
