Classic Potato Salad

The classic pot-luck staple. Lightly tart and savory.

Ingredients

  • 1 1/2 lbs baking potatoes skin and cubed
  • 1 1/4 tspn salt
  • 1/3 cup mayonnaise
  • 1 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 1/4 tspn pepper
  • 1/4 cup sweet relish
  • 1/4 cup celery chopped
  • 1/2 cup red onion
  • 2 hard boiled eggs

Instructions

  1. Combine the potatoes and water into a pot. Enough water to cover the potatoes. Add in 1 tspn of salt and bring water to a boil and reduce heat to medium-high for 15 minutes to cook the potatoes.

  2. In a mixing bowl, combine the mayo, mustard, apple cider vinegar, 1/4 tspn of salt and the pepper and mix well.

  3. Add in the relish, celery, onion, and eggs and stir. Mix in the potatoes and serve.
