
Cheesy Bacon Asparagus Casserole
A cheesy asparagus casserole with large pieces of crispy bacon. The perfect side dish for the perfect feast.
Ingredients
- 6 strips bacon cut into 1" pieces
- 2 cloves garlic minced
- 1/4 cup flour
- 1 1/2 cup milk
- 1/2 cup heavy cream
- 1 cup shredded white cheddar cheese
- 1 cup shredded Gruyere cheese
- Kosher salt
- ground black pepper
- crushed red pepper flakes
- 1 bunch asparagus ends trimmed
- 1 cup Ritz crackers crushed
Instructions

Preheat your oven to 375°.

Cook bacon until crispy in a large skillet over medium-high heat. Remove from pan and drain on a paper towel. Leave 1/4 cup of grease in the pan.

To same skillet, add garlic and saute about 1 minute. Add flour and stir until it turns golden brown. Slowly pour in the milk and cream, whisking until smooth. Let simmer until it thickens. Add ½ cup each of the cheddar and Gruyère cheeses and stir until fully melted.

Add the cooked bacon back to the sauce and season with salt and pepper. Add a pinch of red pepper flakes.

Place asparagus in a 9x13 baking pan and pour the sauce over. Top with remaining ½ cup of each cheese and the crushed Ritz Crackers.

Cover with foil and bake until the asparagus is tender. Remove foil and bake until cheese is melted.
