
Meatloaf Cupcakes
A simple meatloaf recipe baked into cupcake sleeves topped with mashed potatoes.

Ingredients
Meatloaf
- 1 lb ground beef
- 2 carrots grated
- 1 onion grated
- 2 eggs
- 1/4 cup ketchup
- 1 cup bread crumbs
- 1 cup Parmesan grated
- 2 cloves garlic minced
- 2 tbsp parsley chopped
- 1 tspn salt
- 1/2 tspn pepper
Mashed Potatoes
- 3 potatoes quartered for faster cooking
- 3 cups water
- 1 tspn salt
- 1 tbsp butter
- 1/2 cup milk
Instructions

Combine all the meatloaf ingredients in a mixing bowl and mix well.

Place cupcake/muffin sleeves in the cupcake baking pan. Put enough meatloaf into the muffin sleeves to reach the edges. Bake for 25 minutes at 350 degrees Fahrenheit.

Place the potatoes, water, and salt in a pot and bring to a boil. Cover and simmer until the potatoes are soft. Drain.

Add the butter and milk and mash the potatoes with a fork. Scoop into a large ziplock or pastry bag with a cupcake icing attachment. Top the meatloaf with the potatoes to make them look like cupcakes.
