Pulled Pork and Mashed Potatoes

Ingredients

For the Pulled Pork:

  • 4 lbs pork shoulder
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 cup barbecue sauce your favorite brand or homemade
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Mashed Potatoes:

  • 2 lbs Yukon gold potatoes peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk more if needed
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish, optional

Instructions

Prepare the Pulled Pork:

  1. In a large slow cooker, heat olive oil over medium heat. Sear the pork shoulder on all sides until browned. Transfer the pork to the slow cooker.
  2. In the same skillet, add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute.
  3. Pour the barbecue sauce, apple cider vinegar, and chicken broth over the pork in the slow cooker. Add brown sugar, smoked paprika, ground cumin, chili powder, dried thyme, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.
  5. Once done, remove the pork from the slow cooker and shred with two forks. Return the shredded pork to the slow cooker and stir to mix with the juices.

Prepare the Mashed Potatoes:

  1. In a large pot, cover the cubed potatoes with cold water and add a pinch of salt. Bring to a boil over high heat. Reduce the heat and simmer until potatoes are tender, about 15 minutes.
  2. Drain the potatoes and return them to the pot. Add butter and begin mashing with a potato masher.
  3. Gradually add milk, mashing until the potatoes reach your desired consistency. Season with salt and pepper to taste.
  4. Garnish with chopped fresh parsley if desired.

Serve:

  1. Plate a generous portion of mashed potatoes and top with pulled pork. Spoon some of the cooking juices from the slow cooker over the pork for extra flavor.
