Pulled Pork and Mashed Potatoes

Ingredients
For the Pulled Pork:
- 4 lbs pork shoulder
- 1 tablespoon olive oil
- 1 large onion diced
- 3 cloves garlic minced
- 1 cup barbecue sauce your favorite brand or homemade
- 1/2 cup apple cider vinegar
- 1/2 cup chicken broth
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Mashed Potatoes:
- 2 lbs Yukon gold potatoes peeled and cubed
- 4 tablespoons butter
- 1/2 cup milk more if needed
- Salt and pepper to taste
- Chopped fresh parsley for garnish, optional

Prepare the Pulled Pork:

In a large slow cooker, heat olive oil over medium heat. Sear the pork shoulder on all sides until browned. Transfer the pork to the slow cooker.

In the same skillet, add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute.

Pour the barbecue sauce, apple cider vinegar, and chicken broth over the pork in the slow cooker. Add brown sugar, smoked paprika, ground cumin, chili powder, dried thyme, salt, and pepper. Stir to combine.
