Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic minced
  • 1 teaspoon sesame oil optional but lovely
  • A pinch of black pepper

For the Salmon and Vegetables:

  • 4 salmon fillets about 6 oz each
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 cup snap peas or green beans
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sesame seeds and chopped scallions for garnish optional but highly recommended

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. In a small bowl, whisk together molasses, soy sauce, vinegar, olive oil, ginger, garlic, sesame oil, and black pepper until smooth and glossy. Set aside a few spoonfuls for brushing at the end.
  3. Place your salmon fillets on one side of the prepared baking sheet. Arrange the vegetables on the other side. Drizzle the veggies with olive oil and season with a little salt and pepper.
  4. Brush the salmon generously with the molasses-soy glaze. Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  5. Brush the reserved glaze over the salmon once more right out of the oven for that gorgeous shine. Sprinkle sesame seeds and chopped scallions on top for a little extra flair.
