Pineapple Fried Rice

Ingredients

  • 1 Pineapple
  • 8 tbsp Oil
  • 2 Eggs
  • 1/2 lb Prawns or Shrimp Peeled and deveined
  • 3 Garlic Cloves Crushed and minced
  • 1 Red Chili Sliced
  • 1 Onion Chopped
  • 1 1/4 cup Cooked Rice
  • 3/4 cup Frozen Mixed Vegetables Thawed
  • 1 tbsp Fish Sauce

Instructions

  1. Cut the pineapple in half length-wise and remove the flesh, throwing away the core. Cube the pineapple flesh.

  2. In a wok or a large frying pan, heat 2 tbsp of oil on medium-high to high. Whisk the eggs and add in to the wok and scramble.

  3. When the eggs are nearly done, add in the prawns until they turn pink and remove from the wok.

  4. Pour and heat 6 tbsp of oil into the wok. Add the garlic, chili, and onion and cook until the onions are tender. Add the cooked rice and the mixed vegetables. Stir until the vegetables are heated through.

  5. Add in the eggs and prawn and continue stirring until the prawns are heated through. Add the fish sauce and pineapple. Stir and cook until pineapples are heated through.

  6. Scoop the fried rice into the pineapple shells to serve.
