This tart topping goes great on sandwiches!
- 15 tart apples peeled, cored, and finely chopped
- 1 yellow onion quartered
- 3 1 inch pieces fresh ginger root peeled
- 1 cup white wine vinegar
- ½ cup white sugar
- ½ cup brown sugar
- ½ teaspoon cinnamon
- ½ teaspoon white pepper
- ½ teaspoon ground cardamom
- ¼ teaspoon ground nutmeg
Mix all of the ingredients together in a saucepan. Bring the pan to a boil, reduce the heat, and put a cover on. Let the mix simmer for 30 minutes, stirring frequently, until the apples turn tender. If the ingredients dry out, mix in a little water. Take the onion and ginger out of the mix, and store in a container in the refrigerator until ready to serve.
